Yes. You want it dead flat on the "rear" or it is awkward to sharpen it. Main bevel on one side only and if you look carefully, some people then give a kiridashi a small secondary bevel, right on the very edge. Jury is out on that but the kiridashi is one of the few blades you ideally don't have that "offset".
Typical use is for marking out, especially woodwork so having a dead flat face and a single bevel means the blade is exactly aligned with the ruler.
Above example is held in the left hand. Imagine holding the blade in your right hand then running it along a ruler held in the left. You want the flat non bevel sode to run along the ruler.
Jealous of the oven, you should be alble to get the temperature required very even unlike a forge which typically heats up the thin tip first.
Alternative is some sort of tube with a cap. Maybe something like this but bigger.

I have made a few leather sheaths for mine from @mrsbruce leather, with varying degrees of sucess. The issue is with the large flare of the blade. I'll be very interested to see the @Parm solution to that, it's one of those lovely little problems you can develop neat solutions to.

As for the cats what about lining the tube and putting a collar of oil soaked fabric to keep the blade oiled everytime it goes in and out

Iv just had a google and leaf springs are good candidates too
Brilliant, I’m going to go with a two bevel edge just like a wood chisel. It may not be true to the original but it’s much easier for me to sharpen then for the user to maintain the edge

It is worth having a list of known useful materials but you can pretty much make a knife out of anything (ask an ex. con) and if it works well you can always duplicate it in the material of your choosing. I made three or four kiridashi before I even got close to a design type I liked and the prototypes really help with the process.
