Welding thin stainless with wood beneath

I'd neatly fold the stainless and bond it.
If you want ridiculously strong and ever lasting get a tube of car windscreen glue. Just dont get it anywhere you dont want it.

Our rats dont chew wood but they do like the little blue cubes we leave out for them!
