Thanks for the tips. It turned out I had the torch set too low and was heating the pipe too slowly which made the joints hot for longer and start to discolour. I've turned up the DIY shed torch, am heating in the right place and am getting nice clean shiny joints now (mostly - I'll need more practice).
Took longer to take the airing cupboard apart and replace a gate valve with a ball valve - the cold water tank needed to be drained as the gate valve had furred up. Nasty things.
