Also, does it leave iron & steel completely untouched. I want to clean up a couple of brake callipers prior to reasealing, can I just lob them in, or do I have to protect the bores?is there a rough guide how much powder to water please

It's inevitable that each metal is going to react differently, the best thing to do is keep an eye on the first one. In the case of the calipers I would mix up a hot solution and check every 10 minutes or so. Rust will disappear very quickly if it's hot, but clean metal won't see an effect.
Could it have come off the pot? I noticed there's a kind of burned area in the pot where some of the stainless has come off.Cleaned the disc brakes offf my Speed Triple, the other day, came out with what looks like copper staining.
