That's the bugger sorted.
In a potentially controversial choice, I have done the fittings all the way up, backed out a couple turns, put low strength thread sealant round the last 2-3 threads of each flare nut to make it form a little bead where the nut meets the fitting, and tightened to the correct torque with a crows foot.
I'm not interested in it sealing properties and didn't want it anywhere near the flares or at risk of getting in the lines...
But I do want it to form a barrier to stop corrosion building up and locking the threads together around the outside, making it difficult to service for the next person.
