think with the roof on it's way out I'd just take it off and build a steel framed roof.....
if u can bin the tiles (sell em on) and use tile shaped /formed insulated steel roof panels.....
u\ll be glad u did when it's finished...
also it will add to the value of ur house straight away....
There's nothing inherently wrong with the timber trusses. I wouldn't be able to change the roof covering from what's there as it matches the house and again it's an AONB so would require planning permission.
As to adding value, not unless it was liveable space which would be a big no no. Decent storage space would no doubt appeal to some of course but you'd have to stoop. Local planning deliberately restricts outbuilding roof heights to prevent a change of use.
Money no object I'd buy attic trusses, replace the roof increasing the height a bit and take my chances.
