Why are gas cylinders a popular choice for making barbecues, rocket stoves, etc?

Would a stainless steel keg be better than a gas bottle?

I’ve got a SS keg BBQ that’s been sat in the garden and used regularly for the last 16 years. It’s good as gold apart from the frame suffereing from rust

I don't think that you can legally own a stainless keg.

So if I decided to setup an "artisan brewery", where would I get kegs?
