Earlier there was a mention of knives and torches which made my ears spring up. Needless to say i’ve Posted about torches. Well now the knives. Number 1 through to 7. First one made as a teenager. No 2 scrap from foundry cobalt chrome used for hip implants (not finished handle yet) no 3 Damascus blank. No 4 bushcraft D2 steel, and sheaf 2nd attempt.5 Japanese chef knife. 6 O2 carbon chef knife. 7 14C28N paring knife

I would love to own one of those beautiful Damascus blade penknives, unfortunately it would be wasted on me as most of the time I abuse mine by repeatedly taking the edge off by cutting plastic. On the upside, few things in the countryside are quite as satisfying as slicing into a tightly packed hay bale and hearing the sound as a taught loop of baler twine suddenly realises it has two free ends

Most of mine get the same treatment on a daily basis. Scraped, dug, sliced and abused but still with a polish will come up nice again.
Never used much coarser than 1500 grit sandpaper to get the edge back.
Cardboard and vinyl wrap I find the worst for dulling the edges.

The Global G2 on top and GSF15 in the middle get used every day, I try to keep them shaving-sharp, they're thin and light so a pleasure to use.

The lock knife on the bottom is a cheap nasty thing, I've had it at least ten years, it used to be significantly thicker and longer but I sharpened it on a bench grinder before I knew better. It's all stainless and holds an edge for all of five minutes* but that makes it perfect for being abused, I've got no problem prying stuff or hammering it. It lives in my toolbox next to a stanley knife but I reach for it first. There used to be something engraved on the side, the name of a contractor I think, I ground it off years ago for some reason.

*EDIT; Having said that, sat here fiddling with it while typing, I've just cut my finger.

I’ve got the same big Global knife, like you it’s my go to everyday kitchen knife

Another vote for the global kitchen knives, expensive but superb, I bought the Mrs a set as shes into cooking, hence why Im a fat git. And it annoyed me when she wanted to buy yet another set of poor knives at inflated prices.

Another stamp of approval for Global Knives. I’ve had a set for around a decade after picking them up at Costco and dumping the block for a magnetic wall mount. A quick run through the Minosharp and they come up very sharp with a long lasting edge. Very satisfying to use.

I make my knives and recommend 14C28N fantastic steel. Great edge retention, corrosion resistant, you can even heat treat at home.

Yes and No

Boker is still made in Germany but Boker Plus is outside Germany, mainly China. Most of their knives are now under the Boker Plus brand.

Sandvik have really focused on knife steels...even recommending different steels for different, but very similar, applications. Used to be that 440C was considered the best, sometimes called surgical steel, as it was "stainless" but hard and could be sharpened....Sandvik have introduced a whole load of others...Most of them are the high(ish) Chromium, high Carbon variety same as 440C.
