I asked a similar question a few weeks ago, and have now got some non-galvanised sheets to practice with.
I would have thought that galvanised repair panels would be a good thing as it will protect the panels apart from the bits around the weld where the zinc has been ground/burnt off.
In fact, I managed to get a set of galvanised sills for my repair project.
The sills you bought are probably zintec ( electro plated zinc ) and are excellent for car repairs for the reasons you stated.Also zintec sheet is very good for storage as it doesn't rust.
