what kind of fittings do they actually use on domestic supplied gas piping?
Soldered copper, mostly. Afaik, it's still ok to use seamless steel pipe with sealant on the thread, too.

Incoming gas supply to the building until plastic came out was always blue band or similar seam welded b s p pipe with tapered threads sealed with p t f e thread tape (up to 2inch n b )after that it would be hemp & suitable paste ,this system is still used to- day in industrial conditions or flanged and welded (root fill and cap)Soldered copper, mostly. Afaik, it's still ok to use seamless steel pipe with sealant on the thread, too.
