I fully expect you will have done it by now, but if not you could always cut it up into small manageable chunks in situ!

And then weld it back together in his workshop?
Could be an option but I don't know where he'll find anyone that can weld from.

you need it upside down so you don't break the legs

and the van floor is too high to lift it out from

easy solution, flip the van upside down, then the table will be upside down and the van roof will be flat on the ground, then you can just slide it out

Cut top off van , at floor level, then cut across floor, just in front of table. Weld on two castors and you have a mobile table.

Whilst it's raining, is strapping some buoyancy aids to it and floating it out an option?

Just keep undoing bolts and screws on the van, eventually the table will be on the floor.

Does the van have a roof rack? if so, a fence post on roofrack and another going from ground to post. Screw it together, something to hang your winch from.

Do you have a few pallets? make a bridge inside the van over the table and two meter behind the van.
Then put a fence post between the two, from where you can suspend the table.

Edit: it really depends on what you do have available, think more info will give better solutions.
