Got up early and in part trying to get my mojo back, sorted the wine I've got on the go. Racked:
-3 gallon parsnip
-2.5 gallon pear
-3 gallon rice 'n raisin
-3 gallon second ferment, "lighter" rice 'n raisin. Made from the dregs of the first batch.
All drinkable in the "after two glasses you won't care" sense.
Still need to rack the gallon of coffee wine.

Nope, made using instant Tesco Gold granules.
I found that a lot of recipes from Mr Berry's book either needed a couple of years storage for them to be drinkable, or sweetening quite a lot to make them palatable, and I'll drink any old stuff.
Which reminds me that there's a few bottles of elderberry in the shed that I made before 2012 which we need to try.

I’ve got a simple alembic still that my grandad made. I’ve made a tall column reflux still, produces about 65% pure spirit, been a while since I’ve played with any of this ….Following the "sloe gin" - "vodka" thread of this post with interest...
I don't need flavoured spirits - I need a still...

The reason my glasses are so thick is nothing to do with illicit alcohol consumption btw.
Made some plum wine in Aug last year, tried it the other day, kin horrendous, can I disguise with anything? Mebbe unleaded or similar.
You could try fortifying it with a bit of brandy or something. Although if it's still horrible it'll be a waste of brandy.
Most country wines improve with aging as @Seadog has pointed out. I'm sure I read somewhere that fruit wines need at least 2 years and vegetable 5, but I might have imagined that
