On the subject of Scottish Fish - I was in Arbroath a few months ago - late in the evening in a van. Had fish and chips by the harbour - too late to buy some Arbroath Smokies (kippers in English).
Told wifey the "sob story" - she bought some over the internet and they were delivered this week. When she cooked them - I can declare they were the best kippers I have ever had.

When I worked in the Netherlands there was a fish market every Tuesday....lunch was fresh herring with chopped onion...very nice....raw of course
I prefer my herrings to be rollmopped.
