The vacuum I'm familiar with was a 50 & 100 ton arc furnaces under full vacuum, we took the plant tour, and I asked how they handle all the fire going up the exhaust, as well as pulling a pretty stiff vacuum for degassing.In one hospital we had to replace steam vac with a vacuum pump setup
The testing and commissioning took longer than the install, this is a cannot fail system
He said they use packaged flash boilers, they come up to steam very fast.
so there is the venturi, but also quenching helps pull more vacuum (steam is water expanded 1800x or so)
All this can also handle the fire, sparks, metallic slag, etc.
A motorized system would be much more complicated and more prone to breakdowns.
