I'm not sure that a water jet is the best means of propulsion for a ski boat, you tend to get a rooster tail when planeing which would be pretty unpleasant for the poor bugger in your wake.
I think either shaft drive which I'm not over keen on as to get a decent angle on the shaft you have to mount the engine pretty far forward which takes up a lot of room in the boat.
Or, inboard/outboard with a stern-drive. It's a shame as I like the simplicity of a water jet but I'm not sure it's the right way to go. (I'm not keen on outboards by the way, they seem too temperamental in my experience)
