Yes, you can use an existing switch to 'start' the vfd and add a potentiometer to control the speed if required. I cant really help with which models are recommended as I haven't used a single phase vfd. I have a 3phase in vfd but control options are similar and can be changed to suit your particular application. Its usually easier to add a potentiometer that’s connected to the vfd rather than change values on the vfd itself, especially if you plan on using the original controls to ‘start’ the lathe. If the vfd you choose already has a variable control on the front then you don’t have to add anotherand add a potentiometer to control the speed if required.

Just be aware that very much over-sized units may not have settings which are appropriate for lower powered motors. But buy one bigger than the motor delivery power - they require more input power than they deliver!
I wouldn’t use anything bigger than 1.5kW for that motor - and nothing (of Chinese origin) less than 0.75kW (one horse power).
