The problem with those adjustable sets is that the bar will end up anther 40mm plus off the wall , then you’ll have to pack the riser bar , if it’s rigid pipe off the wall too . Plus it makes for a good weak point being nudged about , and they will start leaking .
The offsets were really meant for being half buried in the wall … so none is seen once the cover plates are on .

Not the one I linked to. It's intended to be used with the z connectors and the cover plates do the spacing for you.
5000ish showers later and it ain't leaking.

I've installed one of those and just got a second to put in. Happy with the units though they are bigger than you may imagine. Had to reposition the temperature know to suit our HW temperature.

Looks like it comes with the "z" connectors as standard now, it was an optional extra when I fitted mine 7 years ago.
Check the specs/installation instructions.
-There is iirc some flexibility on mounting width.
-quite large diameter cover plates that will hide a lot of things.
-might look too big in a 700mm shower?

I've been very happy with it. Kinda wish I'd got the rainfall head with it.
Mounting centres are 150mm +/- 24mm iirc.
