As above, I'd be buying a 2nd hand wiring harness and stripping it down.
You may end up being able to re-use half of it at least.
The factory crimps can be used as pig tails.
Deutsch connectors are really good if you need to easily de-pin a connector (for passing loom through small holes etc), I will be using some when re-looming the Golf.
Any where your loom will flex you need to avoid solder joints as the solder will fracture the wire, Crimp And Seal with the proper tool is the way forward there.
Cable management is your top priority, nice and secure and no chance of the loom rubbing though on chassis etc due to vibration.
A lot of my time at work is spent repairing looms and some of the routing of motorcycle looms is just daft, KTM'S commonly fracture the wiring near the headstock just because of how it's routed.
