In sheet I would agree but don't fancy doing 10mm thick stainless with a hole saw, too easy to let it rub a bit too much.

True. I'm not that well tooled up, better than the average DIYer, but by no means a comprehensively-equipped workshop. I don't mind buying the holesaws - tools that I'll use again although the coffers are a bit empty ATM so I'm trying to keep a firm rein on costs.

I wasn't planning on it till I got the quotes back. Unfortunately I may not have a lot of choice due to financial pressures. I can ask around locally for drilling costs, but people have to make a living. I'm planning to do exactly what the chap in the photo is doing, so I know it can be done with modest gear

The Geka is the way to go, good centre dot & bang there must be a fab shop around you with one, the price of £300 seems excessive compared with what we pay for water jet work

If you take your time, loads of cutting fluid, half decent carbide cutter like in the pic then you will manage. It will be slow going as you will have to keep clearing the swarf out but you should manage.
A drill however would be much quicker and probably not any more expensive, it depends on your bench drill though, if it is fairly stout and has a low spindle speed then I would go that route.

Without a decent drilling machine you will struggle, cheap bench drills usually run too fast and lack power to drill decent sized hole in stainless, you will also need some decent cutting oil such as Rocol RTD which is not cheap, I usually just get stuff like this laser cut, it comes in just needing a deburr with a flap disc and is ready to use,

What constitutes a "decent drilling machine"? I've an old school bench drill, which I understood to be better than many modern offerings. It has a non-original 1/2kW motor (not huge I know) and lowest speed is 576rpm. Rocol RTD I have. Obviously a pro workshop has far more powerful machines, but the video I posted showing a bloke doing it with a cordless drill, albeit only 2mm thickness and my drill has to be more powerful than that.

I've just gone to the drill & worked it out. Mine's 576 rpm. Not 178 as per the Starrett video I know.

FWIW, I was given a lead for a laser cutting co (Microkerf), to whom I have just sent the CAD files. Their price wasn't a lot more than I was being charged for the length of steel I'd need. I'm happy with that.
