I've just discovered an interest in welding and wish to pursue it as a career
Having looked online there are many different training providers
I would ideally want qualifications that are recognised internationally and not just in UK
What would be recomended?

There are 2 main sets of "codes".

All of Europe go by procedures to ISO 15614 and welder testing to ISO 9606. This is for structural, vessels, pipework, everything.

Americans (and a lot of repair work on American machinery) use ASME IX - boilers/vessels and pipework.

They're more or less the same, quality/difficulty wise. It's more about the metal and how you're welding it.

Ultimately, right now for you it doesn't matter one single bit. You won't get your "codes" at college, you get skills college and then start working for a company who will give you experience and put you through code tests.
