There will only be one cupboard to the left which will have the sink above so don't want to use that one.

There's no reason not to fit a socket in the cupboard below a sink.

Just let the plumber finish before you fit it otherwise you may end up with pipes blocking access to the socket.

My pet hate in kitchens - sockets under sinks - looks so unprofessional.

FCU or named DP switch - above the worktop, whatever matches the rest of the sockets and switches.
