Which bambu to get?

In a quandary of which model to get

Not sure if I just go big and get the top model like I would a lathe, biggest I can afford and fit

That'd probably be my approach, if you're not set on a specific model.

Why a Bambu? Plenty of other models out there for far less money. I have the Elegoo Neptune 3 Max - awesome and huge.
Assuming you are on about 3d filament printing?
You need to be more specific.

Have you done 3d printing before? What size parts? What filaments are you likely to print? Do you want an AMS?

If you are starting out I can't recommend this Flashforge printer enough

The p1s and x1 are the same size and print at the same speed. The x1 has a better screen, camera, and hardened hot end as standard. The screen is a moot point as most of the time you'll be sending prints etc directly to the printer from your pc,phone,tablet. After the initial 'wow' of watching a print on your pc etc the p1s camera is sufficient for checking how the print is progressing. The hardened hot end is only really needed if printing abrasive filament and is an easy upgrade on the p1s. I have a p1s and am happy with it, quite a few on here have bambu, so hopefully they'll give their take on it.

That is a good price. If anyone decided they needed more scope/options later on, & buy another printer, that one hasn't broken the bank.
