Bear in mind that for underwater use on wooden boats stainless steel might not be the best solution, even 316 sometimes suffers from crevice corrosion, what sort of boat is she & what bits are you fastening?

Stainless will be fine for that, I just used a box of Silicon bronze screws putting a new stem in a 14ft sailing dinghy,
1"x 8's they cost approx 40 pence a pop. About 22 quids worth, Ouch. Still i wont worry about them snapping or dezincing.
