I had to do similar this weekend making a hub to fit 1.25" bore surface grinder wheels to my bench grinder. If your part has a centre hole you can do what I did. Bore the part first to your size and do any roughing cuts then put a piece of stock in the 3-jaw and turn it down to a nice sliding fit on your bore. Drill and tap the end for a (M10 in my case) bolt. Put the part onto your newly-made arbor and clamp it up tight with a bolt. Now you can do whatever turning you want on the OD and faces and they will all be super-concentric/co-planar, but you have to use lighter cuts than if it was held in the chuck.
