I've had the same machine @KimB and they're not a bad bit of kit. 3 things.
1) The torch with the amps control is pants and I'd do away with it. You keep hitting it by accident and it's in a crap position.
2) Play around with the foot pedal. It sounds like you have it on switch only at the mo and it should work like the accelerator of a car - push down hard more amps ect.
3) As a rough rule of thumb try working to about 30 amps per mm of material thickness when setting up on mild steel. Use a bit less for stainless and a bit more plus the foot pedal when doing aluminium.

P.S Love the lid but, what's it like for weight. I tried one on but felt heavy.
