Summer smoker.

Time to get the barby out if you are like me you get too involved with socialising (drink) and burn everything why not try smoking no not the weed a smoker.
Made from two 45 gallon drums the fire box is located in the bottom and is connected with two flues into the cooking compartment a quarter section is cut out on the top barrel to form a lid and a mesh inserted half way accross to form a cooking platform you cook with the energy that is in the smoke.
You must use hard wood pictured is a twenty pound salmon, I have found out through several attempts that it is better to brine first before smoking as it takes in more flavour.
The salmon was then basted with brown sugar and Rum all you have to do is keep an eye on the temp. guage and socialise thats how it should be.

hi sam been thinking of making a smoker this summer,does it take ages to cook tho? does it cook evenly all the way thru. like my meat well done ,steaks ,chops rather than fish.....

A whole chicken can take upto 4 hrs! but whats the hurry? believe me it is worth wating on,you can cook upto 8 whole chickens in there it is also good for doing chillie,it does cook evenly the temp I run it is around 180 deg.This is called hot smoking.

I've got a half-drum BBQ, if it wasn't for the fact I need to make two, i would have made a 3/4 base with a 1/4 lid. A mate provided the drum and the deal was i got half and built his half, with us sharing the steel costs.
