Running too rich, are they sooty after idling for a while or even after a long run, carburettor rebuild kits aren’t expensive if you can get one.
Could be far too rich at idle re: missing intermittently, idle mixture is adjustable.

Belt & braces - compression test first, then a carb rebuild kit if compression test is OK, also check breather pipes for free gas flow and not full of condensate, you didn't mention any 'pinking' so you can probably discount the centrifugal advance in the distributor although it'd be wise to check the vacuum advance for leaks over a few minutes.

start with the basics ,,, hows the timing and the air filter .
never do a plug test on an engine thats sat ticking over ,,, run it at 3/4 throttle then cut the ignition then look at plugs on a chop test
hows the exhaust looking , bung a meter on the exhaust , other side of it ,,,, its a 2 1/4 dont worry too much , better rich than lean.

Check the choke is fully off.
Wise words.
Automatic chokes are a common source of problems.

It's a manual choke , the lever is on the stop when pushed in so I think it's shut fully .

Double check, I've had this issue before, you think the choke is off but it's on, but generally you grind to a halt.

Many (20+) years ago I was driving my Commer horsebox across France with my new bird (wife now), with its super economical* 4.75 litre petrol engine, and at some point going up a hill it started losing power, dropped a cog, or two, eventually pulled into a cattle market, for the night, texted some mates who suggested changing filters, stripping the carb etc, we were knackered, had dinner, cracked a few bottles of wine, crashed out.
The following morning, went to put the choke on, arm under wheel arch, it was full on, breakdown solved. Drive on.
*economical, well, considering it wasn't that bad, drove from Devon to Barcelona and back, then shoved a TS3 in it, that took some finding.

Disconnect the pipe from the air cleaner to the carb at the top of the carb
i.e take the right angle bend off the carb so you can see down the carb.
Check that the strangler valve is actually wide open.
Years ago, one the Series 2 on one of our club runs in the Trossachs kept on bogging down.
The rubber sleeve between the carb and the right angle bend was in poor condition and was preventing the strangler valve from being fully off.
I've also seen were the choke cable does not have enough free play so if holding the strangler valve open.
i.e take the right angle bend off the carb so you can see down the carb.
Check that the strangler valve is actually wide open.

Looking at pictures of that carb (which are for sale on ebay), the mixture adjustment screw is clearly visible, right down on the flange that goes on to the intake manifold. Solving your problem could be as easy as turning that screw in a little, but then, carburettors don't often seem to yield easy solutions.
I would;
a) very gently, turn the screw clockwise, counting the turns in 1/4's until it contacts the seat (this tells you how many turns it is presently open).
b) Remove the screw completely (anticlockwise) and check it's clean and in good condition
c) Replace it in the carb, but close it down an extra 1/2 turn from the present setting.
Then see how that goes.
