Another good tip I picked up during my meat cooking days is when marinating meat do so in the freezer. Draws the flavour right through the meat.

I love cooking ,it's very enjoyable after a busy day , in the kitchen with loved ones peeling choping ,a glass of wine ,bit of music .
We were non meat eaters for 30 years ..but when we first moved here we started to eat meat again,maybe once or twice a month when people come for a meal localy produced lamb and goat is very good . I built a smoker and had a go at doing bacon , it tasted like the bacon I remember as a kid, but all the pork you get here is factory farmed on the mainland ... I might have a go at smoked goat or fish.. jeff....

It's not charcoal, haven't used it for about five years. I burn logs and then use the embers to give me an indirect heat source. Works very well and free

Even better, the meat looks cooked just how I used to like it. I do miss the bbq meat, even more so after the pictures
