i'm running beads on flat plate of any thickness how high should the weld bead be and should i keep the width to a max of say 3/8 for 3/8 plate(1/8 for 1/8 thickness of metal just trying to figure it all out thanks for the help.

In theory they want to be as flat as possible and just wide enough to cover the width of the joint you are welding, there is no benefit to laying excess weld metal

For running beads on plate rather than a join most of us would struggle for an answer - it's one of those depends why are you doing it things. I'm not sure aspect ratio of the welds would give clues - even welding a couple of plates together the question would become what's the joint prep exactly.

Pop some pictures up of what you are doing. They'll be an easier starting point. Where are your examples?
