Despite the advances with treatment options cures for broken or deformed bones still commonly involve cutting the animal open and bolting a plate or bar into it.
If you use a bolt that's too small/weak and it breaks the consequences can literally be life threatening.
Use one that's too big and you'll increase the risk of complications with surgery, prolong the recovery and unnecessarily increase costs.
There are some pretty intensive training courses you can do for the implant products that go into a lot of detail on the choices available and the tools used with them.

Yes, vertical loading is not the issue, any side load, or lack of triangulation is crucial, as is the tensile strength, rather than shear strength of an m6 bolt. Unless this is a exercise in not drilling holes above 6mm I wouldn't recommend using them...why use m6 when you can use m8 at the same price , the biggest load will probably be from dragging the bench about the floor , and the legs become a lever ,,
