Finally got the kitchen back together and dragged the Hapstone knife sharpening rig out the garage to sort out the neglected kitchen knives and a few others. Well over a year since they were last given any love and it showed despite them being quality knives.
Setup in the kitchen, music on, angles set with gauge and set about restoring the edges. Careful repetitive strokes through the different grades until the edge was back, evenly done from the point to the heel, not mirror finish as these are working knives. So satisfying and relaxing with the knives a joy to use as a result ready for Sunday lunch.
