Im not sure but I think these days the blade is probably a plain carbon steel but the cutting edge is carbide tipped.
We sell loads of stainless for springs, its usually 17/7PH which is a precipitation hardening grade. It is workable in the as drawn and then they heat treat to artificially age the steel which hardens it.

Springs !!!How about coil springs from car suspensions, I've got Some of them, what steel would they be ? And what could I make out of them ?
