In the interest of science I will try the solar panels/ battery combo on the electrolysis tank, wondering if it would be best to have a timer on the tank so it runs through the night and give the batteries time to charge during daylight hours. Or does the collective think a decent size panel could cope with it batteries connected 24/7?

If the power for the electrolysis tank is taken from the MPPT solar charge controller's output terminals, then the controller should turn off that output when the battery voltage drops too low. See e.g. the Epever MPPT controller:
The connections are at the bottom of the panel. Battery goes to the middle terminal pair, solar panel(s) to the left pair, and the loads running off the battery/solar panel i.e. the electrolysis tank, would be connected to the rightmost terminal pair. Put something in series with the output to the tank, to limit the current to the tank (24V light bulb or whatever). The fiddliest thing to do will be going through the menus on the controller, though it should pretty much work out of the box, and any settings made would be to tweak it to better suit your requirements. Oh, and definiotely take care to make connections in the order specified, which is normally battery first, then the solar panel, then the load. Connecting the panels first could fry the electronics in the box.

I've got a 30amp mppt charger, 2x170w panels and about 400ah of batteries on my boat system.
On a decent day in the winter laid flat they can still produce 500Wh and in the summer over 1kWh. Enough to run the fridge on 240v if I wanted to.

I think the problem is charging separate batteries individually, so the electrolysis tank doesn't flatten the truck batteries?
truck batteries won't need much... so why not just stick one panel and one charge controller for each of those
*EDIT: wait I was assuming the truck batteries are on the trucks, but the roof doesn't look very high in the photo? if they're off on the bench then just have one charge controller for the lot
then for the electrolysis tank 2 or 3 panels (or whatever you find cheap) a 12v charge controller and an old duff battery you don't care about? - it'll charge and run the tank during the day then run flat powering the tank overnight... but who cares it's a duff battery anyway? saves messing about with timers or any of that stuff

I built the whole radio translater for radio 4AM a few years ago at port Douglas.
I was the engineer at radio 4AM in Mareeba.
Pub in Port Douglass, used make the best sausage sandwiches ever!!. Then they sold it

Yes and no !!. Some of them are 1000 years old, or even older ( I didnt attend the christening ).
Some grow very fast, some like the ironbarks in my back yard only go for a couple hundred years.
BUT, its the weather pattern that mostly dictates that growth pattern.
A metre of rain in two or three months, then 35 degrees temperatures, coupled with rich volcanic soil for 9 months or so, takes care of that.
The last volcanic eruptions in Australia occured a few cliks out the west of here. ( Undarra lava tubes ) and most of the area can grow anything.

Water is 70 degrees C, it stinks, but WILL cure your bad back!!. Its straight up out of the depths of old Gaia.
