Thanks, BS. That looks the job. And take your point about bigger bags. I'll be coating an area of approx 4 metres x 2 metres high, so not sure how much I will need yet.

I've used those terracotta storage units in other houses and they are very good. But they have two main drawbacks; they get very expensive for any reasonable area covered and they are very wasteful of wall space, Great for display in a kitchen, not so good for bulk storage. Efficient storage of wine only occurs when bottles are stacked side by side.

Take your point about build up of pressure. I didn't really want the extra complexity and noise of a sump/pump, but will look into it. I won't be tanking the whole cellar, just a 3-4 metre wall section of it, so pressure wiill be relieved at the edges.
I do have a small dehumidifier and it does a great job, but it raises the temperature too much for my (and the wine's) liking. THere's no real perfect solution - there will be pros and cons in all solutions I think. Just trying to get the best balance.
parents had a sump in the cellar... it was pretty much just a square cut out of the corner with a pump in it
it was 18inch cube the bottom was concrete appart from about 3 inches along one side where it went down deeper to the mud/soil underneath - don't know if it was always like that with soil at the bottom or that's just the way it ended up after 100 years
pump hardly ever ran, only after a good rain storm etc. original pump was a bit noisy, but it was there when my parents bought the place in the 60's replacement was just a normal submersible pump with a float, pretty much silent - and tbh that was overkill, the slower the better for a sump pump really
I've just typed all that and realised it's interesting (to me anyway) but probably no use to you at all?
why not get some big formica/plastic/whatever boards and line that section of wall with those, stand them an inch off the wall and leave a few inches at the top/bottom ? give the wall room to breath
I've got some big formica boards, and they're pretty awesome, and pretty much indestructible... I'd have given you sume but I need them all (a bit short actually) - I picked them up second hand, some have a wood floor look-a-like pattern on them... and it's pretty convincing... that would look good for you ? (it'll be behind the rack anyway?)

why not use plastic drain pipe just screw it together with small self tappers

@knighty - thanks for all that - I did find it interesting! I'll give it a good reconsider and see if I can fit a sump/pump into the plan. The only things against it are 1) the walls are stone and about 500mm thick and 2) A few years back I laid the cellar floor with a concrete slab on top of a DPM, so don't want to compromise that. Like your folks place, the only time any noticeable water enters is after a proper storm, and even then not too much.

Not at my house...A couple of cubic metres of wine might take a while to dispose of...
they're solid formica all the way through - and they're bloody tough
unfortunately I've got no idea where to get them from - the ones I have came from a skip company after Nissan threw them out as new old stock after they expanded the factory... I was hoping someone here would jump out and say where to get them :-o
but... any kind of big waterproof board will do ?
cheque plate or stainless/aluminium/whatever sheet would be good - the contract between the wood for the wine racks and the shiny metal could look pretty cool?
if you cut down into the floor the sump will be below the dpm so any water under it should drain into the sump too ?
parents cellar was always bone dry, apart from when the original pump broke... didn;t notice till after a rain storm and it flooded to about a foot deep overnight :-o (was a hell of a lot of water)

Solid formica? You won't find them down your local Wickes or B&Q - seriously specialist stuff. I'll have to give some thought to using ali or inox sheet. The only problem will be fixing to them - not as easy as wood. What size bore pipework would you use for pumping the water out?

Is the issue that you face actually two requirements?
Where the wine is stored needs to be cool and it doesn't matter if its a bit damp and the rest of the area needs to be a practical space you can use for other things.
Maybe a partition wall / cupboard arrangement where the wine lives and the microclimate inside can be managed and the other area is treat as a normal cellar room.

my parents had a full sized drain pipe right above the sump... but the hose from the pump was only small... 15mm pipe would do - or even smaller if you use a smaller pump
pump hardly has any work to do, just has to empty the sump every so often, so the smaller pump the better I think - just needs to be able to pump water high enough to go wherever you're pumping it :-)
