I've welded a lot of stainless into cars, ferritic stainless though, lower grades than "proper " stainless.
I've had no problems over many years, one of my cars had stainless welded into it probably in 2011 and it's still good.
You won't get galvanic corrosion if it's properly protected, you will if electrolyte can get the the metal but if that's happening it was going to rust anyway.
