A mate of mine has an articulated catering trailer, great big thing, you need a sorts of things to get a pitch or to be able to tender for an event, my question is who's going to certify a home made fryer and insurance wise I doubt they'd cover it, I'd say save for the second had one or lose out on future events you could attend

Re second hand with no makers plate.

Most can be identified by design.

However until things go wrong every thing will be fine.

Its when it does go wrong you find out just what you should have done.

I would not want to be in an open cab vehicle with 20-100L of even mildly hot oils that are not fully sealed.

You wont be able to put the oil back into the containers even the metal ones as the caps / seals are plastic & it will melt / soften.
Done that a few times not waiting for them to cool at shift end to clean them out.

I think you can buy the control bits seperately for the commercial ones. One of ours had problems and always took an age to light up, having to hold the button in to keep pilot lit, theres not that much to them. When they finally paid the repair guy to come out the burner worked perfectly after that. The commercial ones Ive used had massive burners. Would get through propane quite fast.

Even the normal 2 gallon pans still have residual heat by the following morning, fat does not cool quickly.

Its not that slow. Hot oil will be cool enough in half hour to go in the plastic tubs, we never had problems with it but I guess it depends on the tub. We did *not* get paid to stay late or start early for cleaning and you need it hot for all the crap to flow out with battered fish.

It was a long time ago but I remember we would hot drain through a fine filter every day or two and put the oil back in and it would stay clean a lot longer. Not nessasary if its just chips.
