Spot on. Dessicant dehumidifiers will work at low temperatures. I have one of these in my ~30m^2 workshop - it was pulling good amounts of moisture close to freezing point.For dry air you want a dessicant wheel type dehumidifier, not the fridge type.
For dry air you want a dessicant wheel type dehumidifier, not the fridge type. Basically you pass the dry air into your work space. The dessicant wheel is regenerated by a percentage of the dry air being reverse fed through the wheel out of the space to atmosphere.
