Any tips to get them straight and even spacings
I tried the idea of clamping a straight edge to the surface, marking every so many mm.... but then I found the letters weren't particularly accurately placed relative to the stock of the punch, neither central, nor square to the stock.
Maybe a better brand than Chinoy might give more accurate results though.
I don't know what I was on when I free handed this but I suck now and will try a combo of your tips @Dr.Al and @Morrisman.

You will probably get a bit of an "industrial" look with even spacing. Which may or may not be fine (and will certainly be less of an issue with caps anyway)
But...
In normally type the letters are lever evenly spaced. Indeed, different groupings are even worked out, so "i" will be closer to the center of "r" than it would be, say, to "c".
"Kerning" is the term to Google if you're interested.
As Quinn found, alot of the dies are not central to the punch. And hitting them with differing strengths ['I' requires far less force than 'M'] to get the same indent is far from easyQuinn to the rescue:
