My sister had a huge conservatory, electric underfloor heating, hot water radiators plumbed into the house, plus air con for the summer.
But basically useless for half the year round unless you are prepared to foot the bills.
Ours is basically a feeding room for the dogs, but I have plans for putting a celotex inner roof, to try and moderate the temperatures. One day......

Open the window and close the window. That's all I did in my last house. I found them to be awfully pointless things. Fitted by the previous geriatric owner of the house and full of that whicker basket furniture. It was soon made into a tool stash, much to the wife's annoyance.

I apparently started this thread in 2016, I can't remember starting it and have no idea what the hell I'm on about! I don't have a conservatory "on the new house" never did and never will!

Conservatories have extremes in temperature variations because they are at extremes in terms of collection/storage/loss of energy.
Stuff that makes them hot:
High solar gain - they can be almost all glass!
Low thermal mass - can be heating just one wall and floor
Stuff that makes them cool:
Really badly insulated - almost all glass! Trapped heat fires out through the glass with little to stop it into the winter night sky.
Low thermal mass - as above. There's not much stored heat to loose.
To even out the fluctuations, you can change a few things. As mentioned, curtailing some of the light through the roof will help in summer. But it won't do much in winter unless you insulate too.
You could try to add thermal mass to even out night/day fluctuations. But that won't even out summer/winter changes.
If it's a space you want to heat in winter, you could reroof and insulate. Double or trebble plasterboard to roof to add a bit of thermal mass. If it's a lean to, insulating around the exposed house will help cold bridging too. Judicious management of blinds will help maximize solar gain from low winter light and let you cut down on some of the losses if you shut them in time. Similarly blind use in summer will help reduce overheating.
If it's never going to be heated, you accept it'll andbe freezing in winter and it's just stopping it overheating in summer that's a problem, you could just try the simple reductions in solar gain to start with. Blinds, roof covering, ventilation etc.
Google "trombe wall" if you want some ideas about really making your conservatory payvits way!
