Ideas on removing this bolt

You could just hit the bottom end of the bolt with a BFH and then bend the bracket back to straight after the bolt and nut have disappeared..

Dremel or similar with small cut off wheel, cut a slot in from above, using the small circumference of the disc to get it deeper, widen the slot to suit and use a big flat screwdriver to hold the stud.
If your lucky, it will hold well enough to undo, if not, it will hold enough to junior hacksaw or similar the remains out held from spinning.

I think a hole saw is the answer, cut hole in roof & drop the bolt down through, new bolt up through & duct tape the hole. 10 minutes, job done

cut the top of bracket off, socket on nut , weld/heat to remove , re weld bracket.
