With a meter measure across 2 of the 3 terminals, repeat for all three combinations.

Exactly. Is the capacitance is too height the voltage will be high on your 3rd phase. Too low a capacitance and the motor won't start up or will start very slow. Which may lead to overheating. Ideally you should have start and run capacitors
