Half timber framed house renovation

Can anyone recommend a period property builder in the Worcestershire / Gloucestershire / Herefordshire areas?

We are going to tackle some of the smaller jobs ourselves and would like to know what is the best material for filling the gaps between the oak timber frame and the infill panels as we can see daylight through the walls?

There are other jobs which need professional builders attention- hence the original title.

Oakum and lime putty I believe. Don't think there's any instances where lime mortar can do harm to a building fabric.

Not a builder but SPAB (Society for the protection of Ancient Buildings) had lots of useful info when i lived in an old mill.
