Glamorgan toastie

We went to West Wales, stopped in a cafe and sampled a Glamorgan toastie.
It was absolutely delicious.
I asked what was in it and was told …leeks, onion marmalade, mustard, and cheese.
Does anyone have a recipe for this?

Get some leeks, onion marmalade, mustard and cheese and whack it between two pieces of bread. Stick under grill

Orange marmalade, maybe. But onion marmalade is a different beast.

toasted cheese wedges and tomatoe soup

To be honest, I have never tried or heard of onion marmalade before having one of these toasties. The fact that it was so delicious has made me look further into how it was made.

It's a relish, like mango chutney. Mango chutney on cheese on toast is a game changer
