The secret is to microwave them first - we always do this with heavily marinated chicken.... the barbeque then just does the external cooking and "browning" bit.....Yep especially if still pink in the middle
Where do you find sausages to poach? We buy ours from the butchers …No to microwave lol. Saying that when I do bbq for 300 people I poach the sausages first

Totally not relivent to the bbq mission (I use gas and charcoal and like both for the correct jobs) But that book is well worth a read if you get a copy of it
