My old nozzle end hole is larger in diameter than the new ones i have recently bought.

My question is, will a smaller hole make any real difference to the welding compared to the larger hole in the nozzle end ?

Straight shrouds are generally used on butts, outside corners, laps on thin sheet, tapered shrouds usually used on fillets to get closer to the corner, but at the kind of amps your using on cars its unlikely you will notice any difference, and a taper is a good for general purpose use, getting into tight corners etc, taper shrouds may get clogged with spatter more quickly than a straight.

Thanks for the tips, i am about to do some more practice on 0.8mm lap/butt welding, which will help.

The old one is more tapered than the new ones, the new ones have a tiny tapered end.
