You need to through a few screened cables, a slight earth potential difference in with a lost neutral, then you will know what a bad day is.

Max length on cat5e is 100m including fly leads. I've done several network refits in my time and worked along side Professional Outfits. Never seen an earth cable used with data, but I'm not saying there isn't a scenario where you might have to have one.
However metal comms cabinets should have proper earths to the doors and sides if you are fitting mains powered devices in them.

100m is the official max distance, but I have run longer. I think my record was about 130m uried around a muddy field for a weekend, as there were too many obstacles to run wifi reliably.
Earth shouldn't matter for the cable itself, as others have already said, ethernet cable should be isolated by transformers at either end. Only exception is PoE, but that's a whole different can of worms.
