It would be brilliant if every paint had an anti bloom thinner, not just certain paints.
In this weather it's essential I reckon!
Hmmm, I would say it's not just about finish, its about water spots where moisure gets caught in the air receiver, doesn't get pulled out by a normal trap, so you end up wit little blisters 5 years later - as happened when a certain body shop repaired our Rover 420 when we were rear ended by a young lady in France....
You are ok up to 80% or so - obviously the lower the better but anything under 70% is ok - otherwise you will wait forever!

Last time I tried spraying was 11pm on a 2014 November Sunday evening in the garage, water was frosting on the surface, so had to put in shed (still bloody cold). The paint always stayed a bit soft. I'd like it to be a bit better this time..

Yes I check. Have exactly the same device. Humidity is relative so I hear the garage for some time before spray painting. Raise it about 5 degrees above ambient temperature for a while. I want to get some heat into the building and the car not just the air. I have a couple of electric convection and can heaters.
Then, and this is really important ! just before spraying i switch off the heaters to avoid an explosive fire. I also take them out of the garage so the don't accumulate rust which can also ignite.
Then I open the doors to ventilated and spray. I have a trough draft with front and back doors.
I can knock off about 10% humidity doing this.
