A Sikh lad at work said the secret was cook the spices first then add the onions like you say.

i dont really know, i make and eat fresh to order, personally i dont freeze food like this, but i know of others who have done so successfullyWe don’t tend to store stuff like this for long.
If it’s as good as it looks, I doubt it would be longer than a couple of weeks.
But just to complete the question, how long would it keep in a freezer?
