Christmas cake recipe/feeding tipple

Its that time of year again when thoughts turn to a proper christmas cake. Im going to do a big one for us and a small one for my bestest work buddy. Can’t remember what recipe I used last time, does anyone have a good failsafe one for a nice moist beastie, and whats a good tipple to feed it with ?

I use this recipie that I got from my Mum (sorry its not very clear, but she's not with us anymore to get a better copy). It makes a rich moist cake and its really easy to do.
I make it about now and then feed it with home made Christmas pudding brandy (get a litre bottle of cheap brandy, and smash up a small chrimbo pudding, mix 2 together and allow to infuse for a few weeks, drain, filter and bottle, yummy. Use the leftover pudding for something else), or sloe gin,or whatever else happens to be knocking around.

My dear old Mum would also tell you it's too late for Christmas 2021. She also made hers at Easter.

She fed hers with brandy. She snaffled my Remy Martin one year to do so!

Her cake was definitely of the 'Do not Eat and Drive' variety. Rather amusingly so for a tea-total Primitive Methodist, but apparently Christmas Cake, Egg Nog and Medicinal Brandy didn't count.

Yep, we need to record these recipes before they go. My mum's fruit cake was legend. All I ever remember her saying was "I halve the fruit!" I made a cake a while back with over 7lb of fruit in. From the Dairy Book Of Home Cookery. Aside from burning it a bit it was excruciatingly sweet! I ate half and the birds had the rest.

You forgot the sherry trifle. My nan followed the above Methodist practices.

Feeding is brandy and ours is a derivative of something we found in a book years ago, tweaked to our tastes. We soak the fruit for 24 hours in brandy before making.

for me i prefer this type of christmas cake than full fruit

i also prefer more marzipan and a lighter icing coating

I always put the mixed fruit in a clean coffee jar in January. Fill it with a lowland malt, put the lid on and seal with tape. leave until you're ready to make the cake. Letting the fruit absorb all that moisture keeps the cake really moist. If you want the booze experience you have to add after cooking cos the heat evaporates the alcohol.

When you've made the cake, put it on greaseproof paper on a plate with a highish rim, kind of like a plant pot in its saucer. Obviously all in a box that seals properly. Hat pin to make small holes in the top of the cake to allow your choice of tipple to soak through easily. When it starts collecting in the plate you've done enough. Seal the box and leave until it's time to ice it.

Better than any shop bought stuff.

Ingredients:
1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
lemon juice
4 large eggs
lots of nuts
1 bottle Vodka
2 cups of dried fruit

Sample the vodka to check quality. Take a large bowl, check the vodka again. To be sure it is the highest quality, pour one level cup and drink.

Repeat. Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar. Beat again. At this point it's best to make sure the vodka is shtill OK.

Try another cup .... just in case. Turn off the mixerer.

Break 2 leggs and add to the bowl and chuck in the cup of dried fruit.

Pick fruit off floor.

Mix on the turner.

If the fried druit gets stuck in the beaterers pry it loose with a sdrewscriver.

Sample the vodka to check for tonsisticity.

Next, sift two cups of salt. Or something. Who careshz.

Check the vodka.

Now shift the lemon juice and strain your nuts.

Add one table. Add a spoon of sugar, or somefink. Whatever you can find.

Greash the oven and wee in the fridge.

Turn the cake tin 360 degrees and try not to fall over.

Don't forget to beat off the turner.
Finally, throw the bowl through the window, finish the vodka

Fall into bed.

We found that my mum'sChristmas cake, made in spring and well fed, is best eaten after a walk on Dartmoor after Christmas dinner, buttered, and with a glass of malt. Oh, and none of that marzipan and icing malarkey either!

Remembered I had this gem stashed away in the wardrobe, that came from my beloved nans house. I’d wondered whether there was a cake recipe in and as a bonus it even has her writing in it. ( I notice there is no mention of soaking the fruit, guess they didnt want the vicar to know of such practices )Will be trying all the parkins and gingery things too
