If we're talking about the Harrison horizontal/vertical mill they were made with two top speed options. Either 1000 rpm or 1500. The difference was achieved with alternative motors. Was yours the 1000 version Mark? My guess is that the motors were 4 pole for 1500 and 6 pole for 1000. Mine was 1500 top and had a 4 pole motor.

Yes it's a horizontal Harrison mill. The spindle motor is in the stand and quite awkward to get to, I think the vertical Harrison mills are very similar.

I think the motor is mounted differently in the vertical.
Yes can see that the table motor might be the only drive to it, but I wrote that assuming the table is mechanically driven, as most substantial ones are.
Re the pump amps, sorry here you are wrong, if you restrict the flow the pump moves less liquid, so the amps will come down, I promise.
Having done a bit more reading about how the VFD I was planning to use will only give me the same 240v output voltage but with 3 phases, how I would need to rewire the mill and probably get another VFD for the table motor I'm thinking I might just get a second hand Transwave rotary phase converter to provide 3 phases at 415v. I wouldn't have to rewire the mill, or wire in 2 VFDs and all the controls on the mill would work the same as if the supply was a 3 phase supply from the mains, plus the motors would run at full power at the voltage they were intended to be used at. I'm struggling to see a downside as I am not bothered about infinitely variable spindle speed, I was planning to just change the spindle speed using the belts and pulleys.
